- 1/2 cup + 1 heaping tbsp. brown rice flour
- 1/2 cup cocoa powder
- 3.5 tsp PURICA Complete 360 powder
- 1.25 tsp baking soda
- 1/4 tsp fine grind Himalayan salt
- 1/2 cup unsweetened apple sauce
- 1/2 cup (real) maple syrup
- Flaxseed egg substitute **
- 1.5 tsp. pure vanilla extract
- 1 large, ripe avocado
** 3 tbsp ground flaxseed plus 9 tbsp water, whisked and allow to thicken for 5 minutes before adding to mixture
Pre-heat oven to 350° F. In a large bowl whisk the dry ingredients. In a separate bowl blend well the wet ingredients. Add wet to dry and mix well. Pour batter into well greased 8″ x 8″ pan and bake for 20-25 minutes depending on how moist you like them, 25 minutes will yield cake-like texture.
